When people have rice and kimchi, you normally think of Kimchi Fried Rice. I’d like to introduce a different rice dish with Kimchi called Pork Kimchi Rice.
The rice is cooked with diced, well-fermented kimchi and diced pork belly or pork butt lightly seasoned with black pepper, soup soy sauce, and ginger juice. For a better flavor, I added Kimchi juice. One thing you have to remember is to reduce the amount of water for cooking rice because of juice from the kimchi. If you don’t reduce the amount of water you will have soggy rice.
When the rice is cooked, mix up with bit of soy sauce and sesame oil and then Voila!!!
